Broad Bean, Bacon and Feta Cheese Salad

BROAD BEAN, Bacon and Feta Cheese Salad


INGREDIENTS

BACON, (Chopped into small pieces)
BROAD BEANS (take out of pods)
FETA CHEESE (Cubed)

OPTIONAL EXTRAS
Peppers
Onions
Radish
(Be daring try other things)


Step 1 :     Place Podded Broad Beans into boiling water, and simmer for four or five minutes (a little longer when the beans are getting tougher towards the back end of the season).
2 : Plunge into ICE Cold water and leave to cool until needed (this stops them cooking)
3 : In a large frying pan, add a little oil, heat and then add the cubed bacon
4 : Fry the bacon until almost cooked
5 : Add any optional extras (onions / radish / peppers)  and cook for a further couple of minutes
6 : Add the already cooked broad beans,   and heat through
7 : Once everything cooked, and you are ready to serve,  add the cubed feta cheese and serve immediately
